Brussels Sprouts Slaw
Perfect side to bring to any potluck
I hated Brussels sprouts as a child. It had a weird funk? I just remember my first experience eating Brussels sprouts was just not enjoyable haha. But one day, I don’t even remember when, I started to enjoy eating them! They’re delicious! I think the main thing about Brussels sprouts is how they’re prepared. They’re so good roasted but I find that they’re also very delicious when they replace their older brother (cabbage) in coleslaw.
I randomly came up with this recipe when I was thinking about what to bring to a potluck my friend was hosting (he made a beef wellington!).
Ingredients
~2 pounds Brussels sprouts
2 apples
1/2 red onion, can also use shallots
~1 cup mayonnaise
~2 tablespoons dijon mustard, I use the one with whole grain
~1/4 cup honey, can replace with sugar
Juice of 3 lemons, can replace with white wine vinegar
Salt and pepper
Directions
Cut off the ends of the Brussels sprouts. Slice them in half. Then cut each half into multiple pieces as if you are making shaved Brussels sprouts. No need to be overly concerned about how uniform each piece is as they will add a variance in textures. you can also instead use a mandoline to shave each Brussels sprout, as it is quite labor intensive to chop everything up! I take it as knife skills practice.
Dice two apples and half a red onion. Add them to the shaved Brussels sprouts.
In a separate bowl, add 1 cup mayonnaise, 2 tablespoons dijon mustard, 1/4 cup honey, the juice from 3 lemons, and salt & pepper. Mix everything together.
Add the dressing to the Brussels sprouts mixture. Mix everything together. Then store the slaw in a container. I usually store them in separate containers. Refrigerate and then enjoy! I prefer to eat this slaw the next day as it allows the flavors to enhance and mellow some of the funkiness of the Brussels sprouts.
