Spicy Korean Chex Mix
tteokbokki flavored
Have you ever had furikake chex mix? It’s so so good. I made it (using Justonecookbook’s recipe) as part of my Christmas cookie box last Christmas and so many of my friends raved about it. This led me to think of making my own version, but Korean! I drew inspiration from tteokbokki and decided to mirror its flavor profile.
Tteokbokki usually has fish cake added to it. That’s why I added seafood flavored chips. Also, the tako chips look pretty similar to fish cake slices and the shrimp chips are in the same shape of the rice cakes. I use only rice chex to mirror the rice cake aspect of the dish and added corn chips just for texture. When you add ramen to tteokbokki, it become rabokki! That’s why I also added ramen noodles from my favorite ramen, Samyang, but you can also use any other brand you like.
I made the spice mix to mirror the furikake in the furikake chex mix. And I also added the gim jaban just for some added umami. But ooh maybe I should have replaced it with some gim bugak, seaweed chips. Maybe I’ll do that next time I make this! haha.
Ingredients
1 large baking tray
Chips Mix
use heaping cups
8 cups rice chex
4 cups tako chips, 농심 자갈치
4 cups shrimp chips
4 cups No Brand corn chips 노브랜드 콘칩
2 bags Samyang ramen, crushed
Gochujang Syrup
1/2 cup (1 stick) unsalted butter
1/2 cup sugar
1/4 cup oil
1/2 cup corn syrup
1 tablespoon gochujang, red chili paste
1 tablespoon soy sauce
Spice Mix
5 tablespoons gochugaru, Korean chili powder
4 tablespoons sesame seeds
3 tablespoons turbinado sugar
1 teaspoon garlic powder
1.5 seasoning packets, from Samyang ramen
50 grams (1 bag) Gim Jaban 김자반, seasoned seaweed snack
Directions
Preheat the oven to 250 degrees F.
Add 8 cups rice chex, 4 cups shrimp chips, 4 cups tako chips, 4 cups corn chips, and 2 bags ramen to a large baking tray.
In a saucepan, melt 1/2 cup unsalted butter over low to medium-low heat. Then add 1/2 cup sugar, 1/4 cup oil, 1/2 cup corn syrup, 1 tbs gochujang, and 1 tbs soy sauce. Whisk everything together and cook until the sugar fully dissolves. Then remove from heat and let it sit for a bit.
Add 5 tbs gochugaru, 4 tbs sesame seeds, 3 tbs turbinado sugar, 1 tsp garlic powder, and 1.5 packets of ramen soup base to a bowl. Mix everything together to make your spice mix.
Pour the gochujang syrup over the mixed chips. Mix everything together using two spatulas until all of the chips are evenly coated with the syrup. Then sprinkle the spice mix evenly over the chips and add 50g of the Gim Jaban on top. Mix thoroughly.
Bake in the oven for 1 hour. Take the pan out every 15 minutes to mix everything together (3 times).
Once it is done baking, let the chex mix cool down to room temperature. Be sure to mix everything while it cools every 5-10 minutes for around 30 minutes. This is to prevent the chex mix from sticking all together.
