Peach Caprese Salad

A refreshing and simple dish that is perfect for summer

This dish is really simple yet refreshing. It calls for minimal ingredients so having ripe and delicious tomatoes and peaches is definitely called for! Also, having high quality balsamic vinegar and olive oil definitely helps as well. This dish is perfect for the hot summer!

When I originally made this, I didn’t layer each slice with salt. But I saw that being done in a video I saw online. Definitely, salt each layer. It makes a huge difference!

Ingredients

2 peaches
3 heriloom tomatoes
8-16oz mozzarella cheese (I didn’t use the whole log)
Bunch of basil
Balsamic Vinegar
Olive oil
Salt


Directions

  1. Slice your peaches, tomatoes, and mozzarella.

  2. Layer them with basil leaves sprinkling salt over each layer.

  3. Cover with a drizzle of balsamic vinegar and olive oil.

  4. That’s it!
