Peach Galette

I love galettes. They’re so simple and easy to make yet they’re so pretty and delicious as well! Add peaches to this? Even better! :D
I always return to making galettes. Mainly because they’re so simple to make! And I don’t have to worry about blind baking or the pie crust sagging.
Ingredients
makes two galettes
2 pie dough
4 peaches, cut into slices
2 tablespoons brown sugar
1 tablespoon corn starch
Pinch of salt
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
Juice from 1/2 lemon
Peach preserve
Egg wash
Demerara or turbinado sugar
Directions
Preheat your oven to 400 degrees F.
Roll out your pie doughs into ~12-inch circles. They don’t need to be perfect.
In a separate bowl, add 4 sliced peaches, 2 tbs brown sugar, 1 tbs corn starch, 1 tsp vanilla extract, 1/4 tsp cinnamon, juice from half a lemon, and a pinch of salt. Mix.
Lay your rolled out pie doughs onto baking sheets lined with parchment paper. Smear some peach preserve on top and equally divide your filling between both galettes.
Fold the edges of the dough over the filling, overlapping as needed. Brush with egg wash and sprinkle demerara or turbinado sugar on top.
Place into your oven and bake for 40-45 minutes. I like to switch and rotate the pans at around 25 minutes. Bake until the edges are golden brown and the filling is bubbling.
Let cool to desired temperature and enjoy! It’s especially delicious with a scoop of ice cream on top.
