Flourless Chocolate Cake

the perfect balance between decadent and light

I love making flourless chocolate cakes as a birthday gift to friends. It’s so simple and easy to make yet tastes delicious! Also, I usually have all of the ingredients on hand. Can you believe that this cake consists of mainly four ingredients?! It has the perfect delicate balance between decadence and lightness. You should definitely give it a try!

I always have eggs, chocolate chips, sugar, and butter on hand. So if I find out it’s a friend’s birthday soon and I don’t have much time to go to the grocery store, this cake is always my go-to. It’s so simple and easy to make, but so delicious!

Ingredients
I used a 9” springform pan

6 tablespoons unsalted butter, cut into small cubes, plus extra for pan
8 ounces semisweet chocolate, I use Guittard chocolate chips
6 large eggs, separated
1/2 cup (100 grams) sugar
Pinch of salt
Powdered sugar, optional, for dusting


Directions

  1. Preheat the oven to 275 degrees F.
    Butter the bottom and sides of the 9-inch springform pan. Make sure to especially add a lot of butter on the upper rim area of the pan.

  2. Add 6 tablespoons unsalted butter and 8 ounces semisweet chocolate to a heat proof bowl and place the bowl over a pot of simmering water, forming a double boiler. Gently melt the chocolate mixture as you constantly mix with a spatula. Once everything is fully melted, remove the bowl from the pot.

  3. Add 6 egg yolks to the chocolate mixture and whisk it all together.

  4. In a separate bowl, add a pinch of salt to the 6 egg whites and beat the egg whites with a hand blender set on high. As the egg whites are being whipped, gradually add 1/2 cup sugar to the whites. Beat the whites until stiff peaks are formed.

  5. Transfer 1/4 of the egg whites to the chocolate mixture and whisk everything together. Then add the rest of the egg whites and switch to a spatula to gently fold the batter together.

  6. Pour your batter into your buttered pan and smooth the top with your spatula.

  7. Bake for 45-50 minutes until the cake pulls away from the sides of the pan and the center is set.

  8. Let the cake cool completely. Then remove the sides of the pan. Sprinkle with powdered sugar if you want and enjoy!
