Apple Cider Rice Krispies Treats
apple cider donut flavored
I love rice krispies treats. So when I was thinking of making something with apples, I thought, why not make an apple cider rice krispies treat similar to an apple cider donut? And lo and behold, there was already a recipe online! haha. This rice krispie treat had a slight tang of the apple cider but I feel like it could have definitely used more of a stronger apple flavor.
Do you know what differentiates apple cider from apple juice? I’m not so sure but I believe it has something to do with pasteurization and filtration?
I referenced Food52’s recipe found here: https://food52.com/recipes/88421-apple-cider-rice-krispie-treats
Ingredients
2 cups apple cider or unfiltered apple juice
1/2 cup unsalted butter
Pinch of salt
2 10-ounce bags mini marshmallows
1 12-ounce box rice cereal
1 tablespoon sugar
1 teaspoon cinnamon
Directions
Reduce 2 cups apple cider in a pan over med-high to high heat while stirring with a spatula. I reduce it until it gets very thick and a spatula can cut through it without it forming back together.
In a large pot, melt 1/2 cup butter over medium heat. Brown the butter by constantly stirring the butter with a spatula. It will bubble vigorously but then subside a bit. Watch for browning and a nutty smell. Once the butter is browned, add the reduced apple cider along with a pinch of salt. Stir it together. Lower the heat to low and add one 10-ounce bag marshmallows. Mix until all the marshmallows are melted. Then remove the pot from the heat and add the other 10-ounce bag of marshmallows. Mix until the marshmallows are half melted. Now add 12 ounces of rice cereal and gently but quickly mix everything until the rice cereal is evenly coated.
Transfer everything to a parchment lined baking dish and compress the rice krispies treats into the dish. I prefer to use another parchment paper to press the rice krispies treats into shape.
Combine 1 tablespoon sugar with 1 teaspoon cinnamon and sprinkle this mixture over your rice krispies treats.
Wait around an hour to set then cut into whatever shape and size you prefer.
Enjoy!
