Apple Oat Cookies
an appley and chewy cookie for fall
It’s finally fall! My favorite season of the year. I wanted to start off fall with making recipes dedicated to it, so I decided to make a lot of recipes using apples! I have for you some delicious and chewy apple oat cookies made with brown butter.
I was at my local Whole Foods and I saw a box of brown butter apple cookies on sale. I decided to impulse buy them and then thoroughly enjoyed eating them! haha. So, I decided to try making my own version and this recipe is what I came up with! I felt like it these cookies would pair well with nuts so I also made them with walnuts, which was also delicious!
Ingredients
makes 15-17 cookies
1/2 cup unsalted butter
3/4 cup (~160 grams) brown sugar
1/4 cup (~50 grams) sugar
1 large egg
1 teaspoon vanilla extract
1 cup (~155 grams) all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/4 cups (~130 grams) rolled oats
1 cup (~85 grams) dried apples
Directions
Preheat your oven to 350 degrees F
Heat 1/2 cup of butter on a pan over medium heat while constantly stirring. Once the butter melts, it will start to bubble and foam. After the bubbling subsides a bit, look for the butter to brown with a nutty smell. Once brown, remove the pan from heat. This should take 5-8 minutes. Pour the butter in a bowl to stop it from cooking.
Chop 1 cup dried apples into smaller pieces. In a separate bowl, add 1 cup flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg to a bowl. Whisk together. Then add 1 1/4 cups oats to the flour and mix.
Add 3/4 cup brown sugar and 1/4 cup sugar to the browned butter. Whisk them all together. Then add 1 egg and 1 teaspoon vanilla extract and whisk thoroughly until the mixture thickens and turns paler.
Add the dry ingredients to the butter mixture along with the chopped dried apples. Use a spatula to fold everything together just until no white flour remains. Scoop out 2 tablespoon sized (~40 grams) balls of the cookie dough and roll them together with the palms of your hands so that the dough sticks together. This should make around 16 cookies.
Arrange all the cookies on two parchment-lined baking trays giving space between each cookies. Bake for 14-15 minutes until the sides turn slightly brown. Let cool slightly, then enjoy!
